Chocolate has to be one of the most beloved flavors in the world. Do you know that over 600,000 tons of chocolate are consumed all over the world each year? Or that 90% of Americans have chocolate most every day of their life and that the average person eats 11.5 pounds of chocolate in one year? Wow, that is a lot of chocolate… But it is with good reason, chocolate is so very versatile where in a drink, dessert, or candy.

Chocolate pecan pie is just one of the scores upon scores of desserts featuring chocolate. Chocolate pecan pie is rich in history and tradition.
Chocolate has origins dating back to the Aztec Indians and beyond. Reportedly Emperor Montezuma drank upwards to fifty cups of his dark bitter chocolate brew every day. He served it in golden goblets, saying it was a drink for the gods. The Spaniard explorers did not care for the bitter drink and upon taking the cocoa beans back to Europe, added cane sugar and a few spices such as vanilla and cinnamon and served the drink hot. This was just the beginning…

Spiced Hot Chocolate Mug

1 Cup Milk
1 /4 teaspoon ground cinnamon
1 (1 ounce) square semi-sweet baking chocolate. Finely chopped
2 chocolate sand which cookies.

Mix milk and cinnamon in saucepan. Bring just to boil on medium-high heat. Add chocolate; beat with wire whisk until chocolate is completely melted and milk is slightly frothy. Serve hot with the cookies… or chocolate pecan pie.

The Spanish kept their chocolate a secret until the monks charged with growing the cocoa beans let it out… chocolate then began to spread throughout all of Europe. That’s when it underwent many transformations to become the chocolate we know and love today. Over the years it became such a staple that during WWII the army rations included chocolate bars. The soldiers loved that little burst of energy it gave them and let them keep on going.

Now when you know that when you bite into a chocolate pecan pie you are biting into scores of history and tradition. Pecan pies have been a southern tradition for years and chocolate is a world wide favorite… why not blend the two together.

Chocolate Pecan Delight

1 cup all-purpose flour
1/2 cup butter
1 cup finely chopped pecans
1 (8 ounce) package cream cheese
1 cup confectioners’ sugar
3 cups frozen whipped topping, thawed
1 (3.9 ounce) package instant chocolate pudding mix
3 cups milk
2 tablespoons chopped pecans

Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, cut the butter into the flour with a pastry blender or two knives, until mixture resembles coarse meal. Stir in pecans, press into bottom of a 9×13-inch baking dish and bake 15 minutes, or until golden. Cool completely. In a medium bowl, combine cream cheese, confectioners’ sugar and 1 cup whipped topping with electric mixer until smooth. In a separate bowl, whisk together chocolate pudding mix, vanilla pudding mix and milk until there are no lumps.

Combine cream cheese mixture and milk mixture and stir until smooth. Pour onto cooled crust. Spread remaining 2 cups of whipped topping on top of pudding mixture. Sprinkle 2 tablespoons of chopped nuts over all. Chill in refrigerator until serving.

I remember when I first learned that chocolate has some health benefits. I could not believe that chocolate contains antioxidants.

They have sent years and thousands of dollars researching the health benefits. Eating chocolate on a regular basis will help lower the chance of getting cancer and heart disease. The antioxidants will also lower your LDL cholesterol.

Chocolate will also add beneficial iron, and magnesium to your body. Learning these interesting facts about chocolate has been a lot of fun. Looking up these facts can be a terrific way to pass the time. The downside is that, I often find myself looking up more interesting facts about chocolate than I do studying for an upcoming test. I can not believe that the chip was not introduced until 1939.

Nestle was the first company to introduce the chocolate chip. Which are still the most popular chocolate chip used in most chocolate chip cookie recipes. I also have a hard time believing that the first, milk chocolate bar was not introduced to consumers until 1938.

Americans consume a large amount of chocolate on a regular basis; however, they consume less than most Europeans consume, especially the Swiss.

Americans consume 2.8 billion pounds of candy a year. This is split between candy and chocolate. When you think of the amount of chocolate this equates too, you may not want to know all of the interesting facts about chocolate.

Do not let this fact scare you away, chocolate is still great! Did you know that the term white chocolate is a misnomer? There is absolutely no chocolate in white chocolate. In order to be classified as chocolate, you need to have some chocolate in your product.

If you are one of those individuals watching your caffeine intake, you do not necessarily have to give up chocolate. Chocolate has less caffeine in it than tea. This is a great fact for most chocolate lovers. The best fact out of them all is that there is scientific proof that chocolate does not cause acne, nor does it make acne worst.

These are all old wives tales, to get you to stop eating chocolate. Shame on them for telling us these tales!

Chocolate Recipes Have Changed Over the Years

Chocolate making is somewhat of a tedious business. Chocolate recipes, as they say, sometimes have bittersweet endings. Hence making chocolate is not an easy job and needs an expertise which comes only through experience.

The process of chocolate making is very lengthy one. First of all ripe cocoa bean pods are cut from the cocoa tree, split opened and the pulp inside it is scraped out. This pulp is then fermented for few days and the dried seeds are separated from the remainder of the pulp.

The seeds that are separated from the pulp are used by the chocolate manufacturers. At the processing mill the seeds are thoroughly cleaned to remove any of the remaining foreign particles in it. These seed are then roasted in order to loosen the husks and then are virtually blown in a processor. The final task it to break the inner kernel of the seeds. These broken bits are called nibs. From this point onward the process of chocolate making takes different paths. What is done with these nibs decides the nature of the final product.

If the nibs are ground under heavy stone mills the nibs release oil which transforms the whole mass into what is called as chocolate liquor. Chocolate liquor is a quite thick substance which when hardened produces the bitter chocolate that is commonly used in most of baking and candy making chocolate recipes. Sweet chocolate is produced from the bitter chocolate by adding additional substances like fat, sugar, and cocoa butter.

Cocoa butter is essentially a byproduct of cocoa making process. While grinding the nibs the fat that results from the process is separated from rest of the mass. This fat is called cocoa butter. This is the main ingredient of the all sweet chocolate products. This butter has cosmetic and therapeutic uses also. When the cocoa butter is removed the remaining mass produces cocoa after fine grounding.

Whatever process is now used to make chocolate has evolved over the centuries. The process has undergone a sea of changes. The refined process of chocolate making is the result of number of experiments. The taste of prepared products has played a pivotal role in the changing process of chocolate making.

In past the process of chocolate making was very different from the process that is adopted now. Cocoa, which is a drink, is the mother of chocolate making. The Aztecs prepared their famous drink by crushing the cocoa beans. They boiled the crushed beans with water and different spices and seasoned with pepper. They served this drink cold. Afterwards Spanish stole the process of chocolate making from the Aztecs. For the sake of taste, they replaced the spices in chocolate making by equal amount of sugar and added water prior to boiling. Spaniards successfully guarded this sweet success of making chocolate for nearly 100 years until a Frenchman successfully discovered the secret of sweet chocolate making. What happened then onwards is history.
