How To Prepare:

Combine the chocolate and heavy cream in a medium heavy saucepan over medium-low heat. Stirring constantly, cook for about two minutes, or until melted and smooth. Add the vanilla and liqueur. Serve with the fruit and cake.

This is a new take on an old favorite camping recipe.

Ingredients You Need:

1 cup cream
8 ounces semi-sweet chocolate, chopped
1 cup marshmallow cream

How To Prepare:

Slowly warm the cream in a medium saucepan over medium-low heat. When hot, add the chocolate pieces, stirring until melted. Stir in the marshmallow cream and warm the mixture. Transfer to a warm fondue pot.

Serve with graham crackers and marshmallows.

On listening to the word ‘chocolate’, we all enter into a world of fantasy. The taste fills our mouth with water and we just desire to have that brown colored, sweet and milky flavored stuff. Chocolate is actually not sweet in a raw form. The sweet chocolate we get is a mixture of chocolate and sugar. The other form of chocolate is a white chocolate which is generally not considered as chocolate. It is a mixture of cocoa butter, sugar, and milk.

For health, Chocolate can be beneficial as well as harmful. Chocolate has many positive effects on health. It helps in the circulation of blood and reduces the risk of heart attack. Moderate consumption of chocolate helps in muscles recovery and brain functioning. The negative effects are obesity risk, acne risk and increased blood sugar which is harmful for diabetic patients. Whatever the positive or negative effects are, chocolate maintains its place in everyone’s heart.

Now let’s discuss about some of the types of chocolate. Chocolate liquor is a pure form of chocolate containing 54% cocoa butter. How To Make Perfect Chocolate Fudge

Chocolate Fudge has always been my favorite candy. It’s a very rich candy though, so I have always limited myself to making it only at Christmas time. For years I looked for the perfect fudge recipe. I made many different recipes that were really good, but just not “perfect”. I had three main requirements for a perfect chocolate fudge recipe:

  • Easy. It has to be an easy recipe. I don’t make candy often enough to remember the intricacies of dealing with candy thermometers, hard ball, soft ball, let alone remember the right millisecond in time to jump in and do something with the candy.
  • Taste. Of course, it has to be delicious, but my perfect fudge has to have that creamy melt-in-your-mouth texture. I’ve made many fudge recipes that turned out grainy for me. I’m sure I did something wrong along the way, but I didn’t want to have to worry about that.
  • Availability of Ingredients. The perfect fudge recipe has to use ingredients readily available at any grocery store. In the past, I used to make a chocolate fudge that used marshmallow creme in the recipe. Many time I would have to go from store to store to find it, as it would be all sold out at Christmas time.Finally, about 20 years ago a friend of mine gave me some fudge that she had made for Christmas. EUREKA! This was the fudge I had been looking for all of my life! What was even better is that my friend didn’t mind sharing her recipe, and ever since then, I have made several batches of this fudge every year for Christmas and it has always turned out perfect.The Perfect Chocolate Fudge Recipe
      Follow these directions and you’ll make creamy and delicious chocolate fudge every time.

      This recipe makes 5 pounds of fudge, unless you make it without nuts, then it’s 4 pounds.

      Ingredients You Will Need:

    • 20 oz. Hershey’s milk chocolate bars - I buy the big ones that are always on sale at Christmas time, but any size will do, just make sure it adds up to 20 oz. If you like darker fudge, substitute some or all of the 20 oz. with the semi-sweet chocolate bars.
    • 1 cup butter (not margarine!), softened to room temperature. Also, a little extra butter for your pans.
    • 1-12 oz. package of semi-sweet chocolate chips. Use a good brand, as in Nestle’s, Hershey’s, or Ghiradelli. If you prefer lighter fudge, use milk chocolate chips.
    • 4 cups granulated sugar.
    • 1 and 2/3 cups evaporated milk
    • 2 and 1/2 cups mini marshmallows
    • 2 teaspoons vanilla, use the real stuff
    • 1 pound of nuts, chopped

    In your large stainless steel bowl, break up the milk chocolate candy bars and the butter into small pieces. Pour in chocolate chips and set aside.

    Grease your pans with butter. You’ll need two 9×13 inch flat cake pans, but you can use smaller or larger pans depending on what you have available, and how thick you want your fudge to be. It’s best to have a couple of extra smaller pans ready just in case.

    In a large saucepan or pot, combine sugar, evaporated milk and mini marshmallows. Bring to a boil over medium heat, stirring constantly. Tip: Don’t scrape the sides of the pot when you are stirring, it tends to make candy taste grainy.

    Cook and stir at a light but steady boil for 7 minutes. You might see some brownish bits floating around as its cooking. This is normal. Remove from heat, pour over butter and chocolate in your bowl.

    With a wooden spoon, stir until melted and well blended. Continue to stir until candy loses some of it’s shine. (The shine should go from a shiny, high gloss to a matte gloss). Stir in vanilla and nuts, if desired.* Pour into buttered pans. Cool completely before cutting into pieces. Use a knife dipped in hot water for cutting.

    *If you don’t want nuts in your fudge, this is where you leave them out. If you want to make a pan of fudge without nuts, then first stir in the vanilla, then pour how much you want without nuts into a pan, and then add nuts to the remaining fudge. You’ll need to adjust the amount of nuts then. For example, if you’re making half of your fudge without nuts and half with, then only use 8 oz. of nuts.

    Chocolate Pudding Recipe - Homemade Chocolate Pudding Recipe

    This is a great tasting homemade chocolate pudding that is also low in fat. You can adjust this recipe to suit your own taste.

    3/4 cup sugar

    1/3 cup baking cocoa

    1/4 cup cornstarch

    1/8 teaspoon salt

    3 cups fat free milk

    1 (5 oz.) can evaporated milk

    1 oz. German sweet chocolate, grated

    1 teaspoon vanilla extract

    1/4 cup whipped topping

    Directions

    In a large, heavy saucepan, combine the sugar, cocoa, cornstarch and salt. Gradually stir in the fat free milk and evaporated milk. Bring to a boil over medium heat. Cook and stir for 2 minutes or until pudding is thickened.

    Remove from heat. Stir in the grated chocolate and vanilla. Spoon pudding into dessert dishes. Serve warm or cold with a dollop of whipped topping.

    In a double boiler, saucepan or microwave oven, melt butter and 1 cup of chocolate chips. Stir until glaze is smooth. Drizzle over top of cake.

    Note: You can use powdered sugar instead of the glaze.

    4 egg yolks, beaten

    1 tablespoon vanilla extract

    Directions

    In a 2-quart saucepan, combine the sugar, cornstarch and salt. Gradually stir in the milk. Add the chocolate chips and the unsweetened chocolate. Cook over medium heat; stirring constantly, until mixture thickens and boils. Boil another 1 minute; stirring constantly. Remove from heat.

    In a medium heatproof bowl, add in the egg yolks. Gradually pour in half of the warm chocolate mixture; whisking constantly.

    Whisk the egg yolk mixture back into the chocolate mixture sitting in the saucepan. Cook the chocolate mixture over medium heat; stirring constantly. Bring to a boil and boil for 1 minute. Remove from heat. Stir in the vanilla extract.

    Pour chocolate mixture into the baked pie shell. Press a layer of plastic wrap onto the filling. Refrigerate for 4 hours or no longer than 48 hours. Remove the plastic wrap before serving. Top with whipped cream.

    Chocolate Covered Fruit

    I think all of us have eaten chocolate covered fruit. It is one of the most wonderful taste combinations, chocolate and strawberries, or chocolate and pineapple.

    Making chocolate covered fruit is not only simple but also very elegant looking when preparing desserts for guests.

    The simplest way to make chocolate covered fruit is to buy chocolate chips and melt them down. I buy both brown chocolate and white chocolate. I’ll buy either chips or bars and then melt them over a very low fire.

    All fruit must be dry before dipping. If you wash the fruit, make sure to paper towel off the water, so that when you dip, the fruit is dry.

    I line a cookie sheet with waxed paper and after dipping transfer the fruit to the waxed paper. I then chill in the refrigerator.

    Mix and match strawberries, pineapple wedges, maraschino cherries, apples and pears. I’ve also dipped dried food to add to the platter I’m making. If you don’t use white chocolate, try using marshmallows, and dipping half of the marshmallow in chocolate, so that you have a lot of white showing on your platter.

    I’ve seen beautiful skewers with mandarin oranges used as spacers. Dip your fruit in chocolate and put the orange slices, un-dipped in the middle of your dipped fruit.

    Try dipping strawberries or maraschino cherries and adding them to the top of pudding or ice cream for a very pretty visual look.

    Make or buy a pound cake. Cut the pound cake into squares. Dip half of the square in chocolate and mix on the platter with your dipped fruit.

    When you use fruits such as strawberries and pineapple you are able to have green on your dessert platter also.

    Are you feeling brave? Once you dip the fruit, try sprinkling coconut or chopped nuts over the chocolate. If kids will be eating the fruit, try sprinkling M&M’s or Reeses Pieces over the fruit.

    It’s fun to arrange dessert platters with assorted fruits, some in white chocolate, some in milk chocolate, some with nuts on them, and some with coconut on them. Experiment and enjoy a delicious yet very simple dessert.

    How to Make Chocolate Fondue

    Do you want to know how to make chocolate fondue the easy way? Doesn’t even saying the words out loud, “Chocolate Fondue” make you want to swoon with ecstacy?

    I mean, really! Who wouldn’t love this decadent dessert? Forget the diet! And who says you have to wait for dessert? Treat yourself once in a while and have it for dinner! Why not? Life is short.

    Since the Swiss take all the credit for making up this wondrous invention of fondue eating… it only stands to reason that continuing the practice would carry over to dessert.

    I love chocolate. And anything that you can mix with it. So, learning how to make chocolate fondue for my friends and family was a real treat for me. And the idea of melting chocolate, adding things like nuts, or marshmellows, or fruit, or cake just sends me over the moon! And when you dive into these recipes for this dreamy dessert, you’ll be joining me on the other side of that ol’ moon.

    Here’s how to make chocolate fondue that will melt any choco-holic’s heart:

    What you’ll need:

    - 1 cup premium cocoa powder (ex:Scharffen Berger), sifted

    - 1 1/4 cup water

    - 1 1/2 cups sugar

    - 1/4 cup corn syrup

    - 1/2 cup plus 5 Tbsp heavy cream

    - 5 oz 62% Scharffen Berger (premium semi-sweet chocolate), chopped

    - Pound cake and fruit (ex. bananas, apples, strawberries, plums), cut into bite sized pieces

    First, sift the cocoa into mixing bowl and set aside. When I was learning how to make chocolate fondue, I found out that sifting the cocoa is the real trick to making this recipe work. It helps create the smooth creamy texture that you want for serving.

    Then, place the water, sugar, and corn syrup into a pot and bring to boil. Allow the mixture to simmer for 10-15 minutes until sugar solution has reduced by about 30%. Pour the cocoa powder a little bit at a time into the solution and blend with a whisk until nice and smooth.

    Next, return the chocolate mixture to the stove and continue cooking over medium heat. Add the heavy cream, bring it to a boil and allow to simmer for five minutes. Remove from the heat and stir in your chopped chocolate. Pour it all into a ceramic fondue pot or one appropriate and keep warm until ready to serve.

    Presenting your fabulous chocolate fondue dessert with cut up pieces of cake and fruit is a wonderful way to end your evening with a bang!

    It’s rare to find someone who doesn’t enjoy eating chocolate fondue. Here’s one more super easy recipe to salivate over:

    I can not get enough of this traditional Swiss chocolate fondue dessert. This recipe is very easy to make and you truly will swoon when you try it. Makes for a really good time whether it be for a dinner party dessert, or for some other festive occasion. Enjoy every little drop!

    What you’ll need:

    - 1 cup heavy cream

    - 12 oz. semi-sweet chocolate (chopped)

    - teaspoon vanilla

    First, heat the cream in a medium saucepan over medium-low heat until hot for about 2 to 3 minutes. Next, add the chocolate and stir until the consistency is smooth and the chocolate has melted. Stir in vanilla and transfer to a warm ceramic fondue pot.

    Some great dippers for chocolate fondue are:

    * apple slices

    * sliced bananas

    * flavored biscotti

    * strawberries

    * pound cake or angel food cake

    * lady fingers

    Try some of these variations for slightly different flavors:

    Simple No Bake Chocolate Macaroon Recipe

    This recipe was a favorite of my sister and I. We loved it when my mom would make these. When we were old enough to cook, the house always smelled like chocolate macaroons. I think we made this recipe about a couple of times a week.

    They are very easy to make and super yummy to eat! Another thing I like about this recipe is that you don’t use a lot of dishes, so clean-up is a breeze as well. These cookies are great if you are in a pinch and need to make something delicious in a hurry.

    Another great thing is the ingredient list is very short and most things I’m sure you will be able to find in your very own kitchen.

    I hope you enjoy making these macaroons as much as I know you will enjoy eating them.

    What you need to make the macaroons:

    2 cups granulated sugar

    1/2 cup butter

    1/2 cup milk

    6 tbsp cocoa

    1/2 cup fine shredded coconut

    3 cups oatmeal

    1-2 cookie sheets waxed paper

    1. Combine the first four ingredients together in a large pot and bring to a boil for about 2-3 minutes, stirring constantly.

    2. Take pot off of stove and add the coconut and oatmeal.

    Mix until everything is coated.

    3. Place on a wax paper lined cookie sheet by heaping tablespoon-fulls. To have these cookies ready quickly, cool in refrigerator, or leave and let cool to room temp.
